I <3 Fall!!!!!



I love summer with all my heart. I know, I know...this is about fall. Well, I just had to get that in there so no one misunderstands this post. Everyone that knows me knows that I LIVE FOR SUMMERTIME and time off with my family to go to the beach. That being said, I do enjoy the cooler months of fall and lower electricity bills!

Kasey and I just finished decorating for fall. I did it a little early this year just because I am having that Bunco party this Friday. It is a fall theme and that means super cool fall gift bags for the winners! But, I digress....

The things I love about fall are:

The changing colors of the leaves.

The cooler weather (which really never hits good til the end of November and then sometimes we are still wearing shorts).

The time change....I love long walks on a cool evening after dinner with the family. I think we are going to start riding our bikes too.

Watching cool football games at the North Shore stadium.

Decorating and baking!! :)

I am sure there are many other things I love about fall, but these were the one's on my mind.

Here's a great fall recipe that's a family favorite and super, duper easy.

Homemade Chicken Pot Pie

1 Pillsbury Pie Crust
4 Chicken Breasts (I buy bone in and roast it, debone, and skin it myself)
1 Large Cream of Chicken soup
Potatoes (to your liking)
1 can carrots
Sliced almonds (optional)
Salt and pepper to taste

Just roast the chicken for about 25 minutes on 400. Let it cool and debone and skin it. Then pull it apart into bite sized chunks. In a pot, cut up and boil your potatoes then drain. In a large bowl, mix drained potatoes, chicken, cream of chicken soup, drained carrots. Line a pie plate with one of the crusts and pour mixture into it. Top it with the other crust. Poke holes in the top crust to vent. Place pie plate on foil lined cookie sheet to catch the drippings. Bake on 400 for 40 min. or until browned on top. Add almonds when you serve it. YUMMO!!!!!
(Note: My family doesn't like green beans in it, but I sure do! Add what you like for veggies)!

I'm going to have to try the chicken pot pie- sounds yummo! I love the fall too, i just wish the pools would stay open- since it's still warm enough to get a Saturday afternoon swim- this year I'm adding youth league football, sicne I have a football player- fun times!

I just love fall as well...the crispness in the air...the changing of the leaves...and the new decor that makes its way in the house : )
